Rois variety. And it is buttery, decadent, goodness of the highest order. The pastry is like a cross between puff pastry and a top end croissant. Really Good!
The almond cream filling is plentiful and incorporated right in amongst the thin layers of moist dough. It could be a little sweeter and the overall flavor is somewhat muted (may need salt). However, all in all, this is really an exquisite slice of tradition. And, instead of a plastic baby Jesus, they include a collectable religious medal (one of 100 different Saints) and that's pretty cool too!!
